Before we start - a bit of info that may help:)
Whilst an ice cream maker will usually result in a smoother gelato or sorbet, it is by no means essential to have one in order to enjoy our recipes - especially at the beginning. If you find that you really get into homemade gelato and sorbet making then there are a range of ice cream makers on the market to suit a variety of budgets and requirements :)
How to make Gelato or Sorbet without an ice cream maker:)
- Place your mixture into a freezer-proof container and transfer to a freezer.
- After 30-40 minutes, remove from the freezer and stir the mixture vigorously and thoroughly to break down any ice crystals and introduce some air. The more you stir, the smoother the end result. Then return to the freezer.
- Repeat this process 3-4 times until you have a smooth-as-possible, soft-frozen gelato or sorbet. You will find that each successive time the mixture will get thicker.
- Enjoy as soon as possible or place back in the freezer for later :)
If saving for later, remove from the freezer 20 minutes or so before serving to allow it to soften a little. This applies to gelato/sorbet made with an ice cream maker, as well as that made as above :)
Simply Banana
This could not be simpler, and is very delicious :)
Equipment required:
- Knife and chopping board
- Food processor or high powered blender
- Freezer and freezer-proof tray or box
Ingredients: 4-5 ripe bananas (the kind with a few black spots on them are sweetest).
How to:
- Simply peel the bananas, cut them into slices and place them on a tray, or in a box in the freezer until frozen.
- To serve, remove from the freezer and allow to defrost slightly for 10 minutes.
- Place in a food processor or high powered blender and blend until smooth. This may take a little while, but persevere and scrape down the sides of the food processor/blender periodically. Work steadily, so the bananas don't melt and go mushy.
- You will be rewarded with a smooth, white, creamy and delicious gelato.
- Enjoy as soon as possible!

Freeze any bananas that are going a bit overripe (or buy these bananas cheaply from your local greengrocers specifically to freeze) and you will always have a yummy gelato just minutes away! Delicious served on it's own, or with other fruits such as fresh berries:) If your blender is not very high powered it will probably struggle with blending the frozen banana, so use a food processor instead :) |
The Chocolate Original
This recipe comes from our 'Happy gelati for Beginners' ebook - Enjoy :)
Equipment required:
- Measuring cups
- Blender - a hand blender can work with this one :)
- Chosen equipment for freezing
Ingredients:
- 1-2 ripe bananas
- 1 cup of hulled hemp seeds
- 3-5 dried figs, pre-soaked
- 2 teaspoons raw cacao powder
How to:
- Blend the bananas until liquid.
- Blend in the hemp seeds, followed by the figs, until smooth.
- Finally, blend in the cacao powder until smooth and evenly mixed.
- Transfer to an ice cream maker and follow the manufacturer's intructions, or follow our steps for making gelato without an ice cream maker.
- Enjoy!

Amazing Avocado

This is lovely and fresh :)
Equipment required:
- Knife and chopping board
- Blender
- Citrus juicer
- Ice cream maker or freezer-proof container
Ingredients:
- 2 medium avocados
- Juice of 2 medium oranges
- 1-2 bananas
How to:
- Remove the flesh from the avocado and place in a blender.
- Juice the oranges and add the juice to the blender also.
- Blend until smooth.
- Add the banana(s) and blend again until smooth and evenly mixed.
- Transfer to an ice cream maker and follow the manufacturer's intructions, or follow our steps for making gelato without an ice cream maker.
- Savour the flavour!
